Pinot Grigio

Organic Pinot grigio grapes are picked and pressed to extract the juice. The juice is then fermented in stainless steel tank at 16°C to protect the juice from oxidation. Once fermentation is finished, the wines are racked into a tank where, on its fine lees, are aged for 6-8 months. Once the wine is ready, it went through a light fining and a filtration prior the sterile bottling.

Pinot Grigio

Pinot Grigio is a vine of French origin originated from a mutation of Pinot Noir. Its existence has been ascertained since the fourteenth century. The synonyms Ruländer and Spierer testify to its presence in the Germanic territories between the end of the seventeenth and the beginning of the eighteenth century while the introduction in Italy is traced back only to the end of the nineteenth century. Initially cultivated in Trentino Alto Adige, Pinot Grigio has also found widespread use in other regions, among which Friuli Venezia Giulia, Veneto and, to a lesser extent, Lombardy, where it is concentrated in the Oltrepò Pavese, and in Valle d'Aosta. It is bred mainly to “Guyot”, but also to “Casarsa”, “Cordone Speronato”, “Doppia Cortina” e “Cordone Libero”. It is certainly a controversial vine, intriguing and captivating, able to express itself at levels of excellence. The Italian Pinot Grigio is a dry, balanced wine, with pleasant notes of apple, pear and spicy, harmonious and suitable to be paired with different dishes.
